It is the root of a tropical plant with a solid hairy skin.It looks a bit like a potato, but slightly firmer. It tastes a little nutty and is delicious in soups or stews.
Cooking with eddo :
You have to remove the skin with a peeler or cheese slicer. After peeling it, it looks like a potato, that’s also the way you should use it in the kitchen: it’s great for cooking, frying, baking or steaming.. everything ! You can’t eat it without heating it. If you have a sensitive skin , peel it with gloves.
Is eddo healthy?
It is full of iron and vitamin B6.
Store them in a cool, dry place for about a week.
