What is layered cake almond?

This sweet treat is only served on special occasions, because it is quite laborious to make it yourself; layer by layer the cake must be baked. Luckily you can buy the fresh layered cake now so you don’t have the hassle. The Dutch name ‘spekkoek’ (baconcake) is caused by its’ resemblance with streaky bacon, called speck in Indonesia, where this treat originates.

In this almond variety the dark, rich, spiced layers alternate with the lighter layers with almond.

Cooking with layered cake almond:

It is delicious as a dessert with vanilla ice cream, but just a little piece with your coffee or tea is also recommended.

Storage:

The spekkoek is best preserved when you wrap it in plastic foil and keep in the refrigerator.
