What is spekkoek Moscovice?

This sweet treat is only served on special occasions, because it is quite laborious to make it yourself; layer by layer the cake must be baked. Luckily you can buy the fresh spekkoek now so you don’t have the hassle. The Dutch name ‘spekkoek’ (baconcake) is caused by the resemblance with streaky bacon, called speck in Indonesia, where this treat originates.

In this Moscovice variety, the dark, rich, spicy layers alternate with lighter layers flavored with sugar cane rum from Java.

Cooking with layered cake:

It is delicious as a dessert with vanilla ice cream, but just a little piece with your coffee or tea is also recommended.

Storage:

The layered cake Moscovice is best preserved when you wrap it in plastic foil and keep in the refrigerator.

In The Netherlands you can buy layered cake at supermarkets and exotic groceries.
