What is layered cake?

This sweet treat is only served on special occasions, because it is quite laborious to make it yourself; layer by layer the cake must be baked. Luckily you can buy the fresh spekkoek now so you don’t have the hassle. The Dutch name ‘spekkoek’ (baconcake) is caused by the resemblance with streaky bacon, called speck in Indonesia, where this treat originates.

The dark layers are spiced with cinnamon, cardamom and cloves, the lighter layers taste like vanilla.

Cooking with spekkoek:

It is delicious as a dessert with vanilla ice cream, but just a little piece with your coffee or tea is also recommended.

Storage:

The spekkoek is best preserved when you wrap it in plastic foil and keep in the refrigerator.
