This is the root of the lotus plant. These roots are about 15 centimeters long and are light yellow and oblong … But if you cut through the width of the plant you see the air chambers and that gives a very nice pattern. The taste is not so pronounced that’s why they, along with the cheerful look, are  popular among children. They can grow as long as 1 to 2 meters, but in the stores, you can buy the short version.

Cooking with lotus root:

Remove the peel with a peeler and cut the carrots into thin slices. It discolors quickly, so bake them right away in a stir-fry or put them through a light batter and make beautiful chips. If you want to eat them raw, in a salad for instance, it’s best cook them for a couple of minutes in some water with vinegar and then give them a cold rinse. That way they keep their bite and color.

Lotus root is healthy?

It contains potassium, vitamin B and C in. Great for your immune system!

Storage:

Note that the lotus root feels firm when you buy it, without soft spots. The darker they are,  the older they are. You can preserve them for a week in the refrigerator.
