What is tamarind?
Tamarind are firm, brown pods , slightly larger and wider than a haricot. Usually it’s all about the beans when it comes to leguses, but whit tamararind, we are looking foor the sticky substance where the bean is embedded in. The flavor is slightly acidic which makes the paste suitable for marinades or sauces. It is one of the main ingredients in Worcestershire sauce !
Cooking with tamarind:
Soak some sticky tamarind for a couple of minutes in hot wate , then squeeze and stir it a bit so the pulp dissolves. With a strainer or just with your fingers, separate the pulp from the juice. The remaining ‘thick’ juice can be used for cooking .
You can save tamarind easily in a cupboard outside the fridge. Check the preserving date on the package to make sure.
Tamarind can be purchased at supermarkets or exotic groceries in your area.
