What is white eggplant?

It is related to the tomato and eggplant . In the Surinamese kitchen is also called antroewa. The taste is a slightly bitter. It is rarely eaten as main dish but it combines well with meat and fish or is delicious in a vegetable stew.

Cooking with white eggplant:

Wash it, remove the crown and the seeds and cut the flesh into slices or small chunks. During preparation sugar and vinegar are often added to neutralize the slightly bitter taste.

Is it healthy?

White eggplant contains sodium, calcium, and vitamin C.

Storage:

You can preserve an uncut white eggplant for about a week in the refrigerator. When it is chopped t turns brown quite quickly, so prepare it immediately or soak it in some water with milk.
